DELLA’s wood-fired pizza & cocktails

This modern wine country pizzeria and gin joint in downtown Paso Robles serves up ingredient-driven rustic dishes and California cocktails in a swanky-casual atmosphere that encourages the sharing of blistered wood-fired pizzas, savory sides and entrées, as well as lively conversation. Always eager to chat up their menu faves, locals mix with newcomers at the welcoming bar and at cozy tables.

 


 

Dinner

A few serious factors are what bring about the seemingly effortless, and always amazing, wood-fired pizza at Della’s:  72-hour cold-fermented dough, deliciously playful topping combos, and an authentic Fiero Forni wood-burning oven direct from Italy. Together they deliver extraordinary contrasts of texture and flavor in every pie, making the Della’s experience a distinctive one.

While pizza is the clear obsession, the full dinner menu includes slow-cooked, satisfying entrées as well as light and bright salads and vegetable plates, all made for passing around the table or for individual enjoyment. With a focus on ingredient-driven and wood-fired seasonal dishes, most items are of Italian influence while some exist simply because they are made to be enjoyed in beautiful wine country.

 

 

DRINKS

With a firm commitment to Paso’s cocktail culture, the deep bar menu utilizes house-made ingredients alongside classic components to complement Della’s rustic cuisine. Featuring bright California-style cocktails, vibrant G+Ts, a not-to-be-missed signature amphora-aged negroni, and martinis sure to up anyone’s game, Della’s is Paso’s gin joint. Even so, domestic and international spirits of all sorts as well as local wines and beers are certainly not neglected. Many of California’s most captivating spirits producers are included, alongside some of the hottest brewers and winemakers of Paso Robles and the Central Coast.

 

 

PEEPS

Known for their wood-fired comfort food, extensive whiskey selection, and friendly vibe at The Hatch Rotisserie & Bar, owners Maggie Cameron and Eric Connolly built Della’s Wood-Fired Pizza & Cocktails on the same warm foundation, blended with a contemporary take on blistered-crust pizza and a novel focus on gin.

Avid supporters of all things Paso Robles and the Central Coast, Maggie and Eric enjoy growing food (and beautiful bar garnishes!) and spending time outdoors with their goats, peacocks, chickens, Great Pyrenees, and two delicious children at their couple of acres on the east side of Paso Robles. Otherwise, they can be found spinning around the dining rooms at both Della’s and The Hatch, conveniently located next door to one another right downtown on bustling 13th Street.

We accept reservations 24/7 via Yelp Reservations (button below). Please don't hesitate to call us at 805.369.2535 for parties of six+ guests, or for assistance with your reservation. Walk-ins are accepted as available. If the restaurant is full you’re welcome to add your name to our waitlist and go enjoy the downtown Paso Robles nightlife for a bit - we will shoot you a text when your seats become available.

$25 per 750ml bottle, limit two per party.
